Grilled Vegetables + Farmers Cheese
Farmer’s Cheese is a lot like Cottage Cheese and the only type that I have found locally is a brand called Lifeway.
However if you’re trying to make this recipe vegan, I would recommend going with a grilled tempeh so that you’re achieving a better protein content. You can put the tempeh on the grill with a little bit of lemon juice and garlic salt for a similar taste.
For the veggies, I simply slice whole vegetables
zucchini
squash
onion
bell peppers
asparagus
Cherry tomatoes
Slice veggies so that they each have a flat side and place them on top of the aluminum foil. You don’t need to wrap them in foil, you’re simply making an aluminum foil tray. I then season the vegetables with “all salt” grilling seasoning.
For grilled pineapple, I will also slice that into rounds and lay it flat on a piece of aluminum foil. However there’s no need to brush these with oil.
The only thing I really treat differently are the mushrooms. Here are my favorite ways:
Marinate your shitake or button shrooms in bourbon 🥃
Marinate your portabellas in balsamic, salt + pepper and walnut oil before pan searing
Mix balsamic vinegar and honey to make a glaze
Mix soy sauce, balsamic and ginger to make a glaze. This one is so good (almost like the sauce for potstickers)
