Tofu Quiche

I actually use frozen grocery store crusts. It’s a huge time saver and I personally like the taste.

  • 14 ounces extra-firm silken tofu block ( = one package)

  • 2 Tbsp nutritional yeast

  • 3 Tbsp plain or red pepper hummus

  • Garlic salt and pepper 

  • A handful of spinach leaves

  • 3/4 cup cherry tomatoes (halved)

  • 1 cup chopped broccoli

Instructions

Add the drained tofu to a blender / food processor along with the spices and hummus. Mix in your vegetables and then add the filling to the pie crust.

  • Bake at 375 for 30 minutes
