Healthy Donuts Up Close

So when I woke up craving donuts I went looking through the kitchen at what I had on hand. I realized that I had both fresh cherries and chocolate chips in the house as well as a mini donut pan from Williams Sonoma that my parent’s got me for Christmas. So I started looking online for a quick recipe to make these. Of course I needed to modify in order to make them healthier than a dozen Dunkin Donuts would be :) So here’s what I came up with:

Preheat oven to 350 degrees. Bake for about 10 - 15 minutes.

donut:

  • One cup of all purpose flour

  • 1/2 teaspoon of baking soda

  • A pinch of salt

  • 1/2 a cup of “Nut Pods” which is a non-dairy creamer that uses almond + coconut milk. I used this instead of buttermilk that the original recipe called for

  • 1 large egg

  • 2 tablespoons of melted butter

  • 1 dash of vanilla extract

  • About 1/2 of a bag of mini chocolate chocolate chips melted

  • A few fresh cherries chopped and mixed into half of the batch

Makes 6 mini donuts total

glaze:

  • A dash of the nut pods creamer

  • About 1/2 of the rest of the bag of chocolate chips

  • The juice of 1/2 of an orange

Then top with whatever you like! I used fresh cherries on some, a very small sprinkling of powdered sugar on a few and cacao nibs on the rest.

Bonsus! These stayed completely fresh for 2 days!

So you can totally make these ahead for company the day before :)
