Killer Vegetarian Chili
This chili needs to cook on HIGH in your crockpot for about 3 hours minimum.
1 can of kidney beans
1 can of great northern beans
1 can of diced tomatoes
1 can of cream of corn (yes, that’s right, CREAM OF CORN)
Aprox 1/3 of a yellow onion sliced
1 red bell pepper diced
1 yellow bell pepper diced
1 - 2 cups of water (make sure the water level reaches to the top layer but does NOT cover the veggies)
Chili powder
Black pepper
Garlic salt
Cumin
For the seasonings, I leave that up to you as for the portions. I like a spicy chili so I will often put 4 - 5 teaspoons of chili powder in mine. But just add your spices “to taste” as the mixture cooks.
If you want to add a little more flavor, you can use a lite beer (ex: Bud Light or Miller Lite) instead of water. I find that 2 cans of either works to substitute the water and it does give the chili a bit more flavor. It just depends on what you a) have on hand and b) how healthy you’re shooting for!
