Spicy Black Beans

  • 16 oz black beans

  • 1 small onion, diced

  • 1 garlic clove, chopped

  • 1 tbsp coriander

  • 1 tsp ground cumin

  • 1⁄2 tsp smoked paprika

  • 1⁄2 tsp cayenne pepper

  • 1⁄4 tsp cinnamon

  • Salt to taste

  • 10 oz water

METHOD

Add a few tablespoons of water to a medium saucepan. Then add the onions and garlic. Saute gently until translucent. Add the dried spices next and stir to coat the onions and garlic. Add the beans and stir gently while gradually adding the water. Turn the heat to a low simmer and cook for another 15 mins. Serve sprinkled with chopped green onion and cilantro.
