Loaded Veggie Nachos
First I sauteed mushrooms, fresh yellow onion, zucchini, yellow squash, fresh tomatoes in pan with garlic salt and black pepper.
You can use any veggies that you have on hand. I like to do this with vegetables that I need to cook or they’ll go bad but I have no plan for!
Next I covered a baking sheet with tin foil and filled it with a layer of plain tortilla chips.
Using a recipe for spicy black beans, I took the remaining left over beans and spooned them over the nachos. I then layered the sauteed veggies on top and lastly I used a little bit of queso from a jar (note: you can also use hummus instead of queso and it’s delicious!).
Set the oven to Broil / High and bake for just a few minutes until the nachos are warm and slightly toasted
