Yep. This was my Dinner!
If I’ve got an important project going on at work, scheduled or not, chances are that I’m working late that night. Which means I’m going to need snacks! And it probably also means that I’m not going to have time to make dinner.
Rather than fast food or just having a bag of Doritos at my side, I’ll choose to make something like this which only takes about 10 minutes.
Everyone’s response to certain foods is different. When I’m stressed, adding junk food to the equation FEELS like the right thing to do. However as the night gets longer and I’m no closer to my deadline, the stress levels go up and the junk food plays a very big part in how stable my emotions are.
Candy and chips are very comforting but they have have big consequences for me later and I don’t just mean the guilt. Eating junk food and feeling like things are out of control for me emotionally go hand in hand. It’s just so hard to remember that when I want to pacify my feelings in the moment.
Eating healthy is important. However it’s just as important to remember that you will not always be perfect. Find things that are going to help you get through those times and always keep them on hand.
My dinner:
32 ounces of water
3-4 fresh strawberries sliced
For the Nachos:
Preheat oven to 375
A handful of yellow corn tortilla chips
A handful of cannellini beans (rinsed)
A handful of fresh diced tomatoes
3 - 4 large spoonfuls of Ithaca cold pressed garlic lemon hummus
Newman’s own salsa queso cheese
