No Smell Scrambled Eggs

I personally find the smell of pan fried eggs absolutely atrocious and I know that I’m not alone.

If you’re in the same boat or you have a guest who is, here are couple of “no smell” shortcuts you can take:

  • If I have company, I’ll usually bake a giant batch of eggs in the oven. You crack and scramble them as normal but instead of frying them up, you will put them in a lightly greased baking dish at 350 degrees until they are firm. Then you can take spatula and scramble and spice them as desired. If your’e worried about dried out scrambled eggs, then my sister puts cream cheese in hers to combat the dryness. The bonus here is that they do not smell as bad coming out of the oven and you can make a huge batch, more than would fit in your fry pan.

  • As a vegan in my 20’s I ate tofu scramble and vegan french toast every weekend and it was amazing. Tofu, spices and turmeric for yellow coloring make this a surprisingly good “no smell” dish that is packed with healthy protein and none of the bad stuff.

Be very careful where you get your eggs. Check out this egg score card which can help you better evaluate which brands to stay away from (hint: it’s most of them) https://www.cornucopia.org/scorecard/eggs/

I’ve been following the work of UPC (United Poultry Concerns) since I was in high school and their research has had a huge impact on my approach to food. If you have a moment and / or you just want to learn more about backyard chickens: check out more here https://www.upc-online.org
