Lemon Yogurt Muffins with Strawberry Glaze
For the Muffins:
1 cup of coconut palm sugar
4 Tbsp Unsalted Butter room temperature
3 large eggs
1 Tbsp Baking Powder
1 tsp Salt
1/2 tsp Baking Soda
1 cup Plain Skyr brand yogurt
2 tsp Lemon Zest
1/2 tsp Lemon Juice
Preheat oven to 375,
Mix all ingredients together in a mixing bowl and beat with electric mixer or hand beaters for about 2 minutes.
Spoon into muffin cups and bake until done (aprox 20 minutes)
For the Glaze
About 4 Tbsp of butter softened
5 ripe strawberries cut in half
1/2 cup of confectioners sugar
3 Tsp of Coconut milk
Mix the ingredients for the glaze together with an electric mixer or hand beaters until you can no longer see any lumps from the butter. Note the glaze will be a very thin consistency. You may wish to refrigerate the glaze until you’re ready to ice the muffins.
Once the muffins cool, gently spoon the glaze over each muffin and serve.
The Icelandic yogurt in these beauties make them rather dense and definitely not airy like a cupcake. However the buttery-sweet taste of the strawberry glaze is reminiscent of pound cake. Definitely a brunch time hit!
