Smoothie Bowls
You’ll find that the internet is laden with recipes for the ever popular smoothie bowl. Having a real affinity for foods with red hues, I always make mine with some sort of red berries and pomegranate gems.
Red is the color of passion and it’s wonderful to be passionate about the food you’re eating.
One cup of Skyr Icelandic style yogurt
2 frozen bananas
A handful (use your judgement of how chocolatey you like it!) of chopped dark chocolate
7 ripe fresh strawberries (remove the leaves)
2 tablespoons of cocoa powder or PREFERABLY cacao powder (you can find this at your local health food store)
2 tablespoons of coffee grounds (I like to use the Starbucks VIA instant packets)
The seeds of one whole pomegranate
Homemade or store bought granola of your choice
Optional: Coconut flakes
Combine all ingredients in a blender EXCEPT for your granola and pomegranate seeds which will be used as a garnish. Blend until smooth and top with your ruby red pomegranate gems and toasted granola. Eat with a spoon and enjoy!
Pomegranate Gems
These shiny red "jewels" called arils house a lightly sweet nectar that surrounds a seed in the middle.
In many ancient cultures the pomegranate has a symbolic meaning of fertility and abundance.
